When the space next to Trois Mec became available, opening the bistro seemed like the right move to make.
Jon Shook and Vinny Dotolo’s inspiration came from the fact that they are both parents. As such, the partners wanted to create a place where young kids could enjoy a meal within a pleasant environment. Given that most kids love pizza and pasta, opening an American-Italian restaurant with a casual atmosphere seemed like a good choice. Michael Cimarusti was similarly inspired when he decided to open Connie & Ted’s, which offers low-key New England style seafood. He even took the theme of family further when he decided to name the restaurant after his grandparents.
